Zangy Cactus Salad



Hello Everyone, We wanted to share with all of you, a healthy and exotic mexican dish that we are sure you will love. If you have ever used "Nopal" or Cactus in your dishes, you must already be aware that it is very nutritious, and brings great health benefits.

This plant was born in the High Volcanic Mountains of Mexico, and believed to be the supreme plant and food of the kings and warriors of ancient times.

Benefits Include:

- Great Source of Fiber
- Stabilizies Blood Sugar
- Lowers Cholesterol
- Eiminates Plaque Build-up in Arteries
- Aid in Weight Loss

The great thing about this Nopal, is that it is pretty affordable in most places. We found ours at a Latin Grocery Store Near our house.

We didn't really know about this beneficial plant before, until my Uncles Wife who is Mexican told us about this plant, and how it was a great natural way to lower blood pressure, regulate blood sugar, and weight loss.

We made a dish yesterday called "Ensalada de Nopalito", (Cactus Salad).

There are many different ways to make this salad, you could go on to add meat if you like, include it in Tacos, or use as side dish, there are many options.

After we were done, it had a great taste, which isn't too overwhelming, but at the same time zangy.

Why so Serious?

I was thinking about something, that needed to be shared on here today. It's about being a more spontaneous person. I've come to know a lot of people in my life, who seem to naturally express themselves without fear of rejection or ridicule.

They do silly things when people are watching, make crazy jokes that aren't always funny, and they just forget to live by the rules sometimes. I've always admired people like that, and wanted to incorporate that same attitude into my own life.

I think maybe some people, including myself forgets to live life sometimes. It becomes very easy to become caught up in life's web of problems, and we lose zest in what makes life worth living, spontaneity. So I created my own list of ways to become more spontaneous. Here it goes:

- Don't Always plan everything. I think letting things happen, is more fun. Being impulsive sometimes can be a good thing, because it can lead you to new things you never thought of or even tried. Who knows what you can discover.

- Overcoming Shyness. Try complimenting a stranger, Who knows maybe you'll make a new friend.

- Losing fear. Don't worry about what people will think about you, express yourself and feel good about it. Would be best not to over analyze things, just go with what makes you happy.

- Be a better Conversationalist. Maybe keep up to date with the latest news, the latest movie, talk to people about crazy life experiences you've had. The more knowledge you have the better it is passing it on to others, and keeping others interested in what you have to say.

- Overall, it's about letting go of insecurities, feeling free to be and do what you like, and just be who you are. Try new hobbies, accept an offer to something you always wanted to do, but was too afraid to try before.

The benefits of being a spontaneous person is that you can broaden your social circle, raise your self-esteem, have a more positive up-beat attitude, open new doors of opportunities, and make yourself feel more alive.

A World of Color

What an experience it was, to visit such a diverse and interesting country such as India. Before we decided to embark on such a long journey, we had already begun to prepare ourselves mentally and gather all information we could to make sure the trip would be a smooth and safe one.

Although we had thought we were prepared enough, once we arrived there we came to know you can never really be 100% prepared. It was like we arrived at a door to a new adventure. An adventure you can't escape from, since it's something which envelopes your attention at every opportunity and every corner of every street.

New Delhi was where we spent our time. The Dusty air, noisy traffic, crowded streets especially on Thursday Nights when the Markets were open for all to enjoy. Your eyes would always be caught looking around at the gleaming of each bangle and the colorful long fabrics of sari's which were being sold to all women old and young. Music was always around, any time of day and night, and it created an ambience of nightlife and fun.

The Food was always new and interesting, tasty and not always spicy. There was a variety and it all depends on what you are looking for. My Daughter's Husband, always made sure we were drinking purified water and home cooked meals, or at some restaurants popular among the locals.

Our first experience riding in an Auto Rickshaw, was a little scary at first, but you eventually get used to. It's definitely a bumpy ride, and you have many other drivers zooming by each other just a few inches apart. It's interesting to observe how these drivers could drive in such a busy and fast-paced rush, and still make it look effortless.

The thing that caught our attention during our stay in Delhi, is the contrast between the poor and the wealthy. It's very easy to see the two side by side, and there's always a constant reminder of what kind of lives the less fortunate have to bare each day. Once you come across seeing so much strife, your life becomes more valuable and you appreciate what you have a lot more.

It's been a great life experience for my daughter and I, and we really admired the devotion of the Indian People. They really are devoted to whatever they do, especially when in worship to God. It was a beautiful thing to hear chants and song flowing from the temples in the early morning, right when we awoke. It really gave us a feeling of hope and comfort for the day ahead.

You never really forget the sights, sounds, and smells, of India no matter what part you may visit. It always seems to stick to you and it certainly has for us. Even though our time there was short, we felt a good change in our lives, and we have grown much from it. No matter where you travel we believe it can really open your mind, and give you the chance to learn new lessons in life, if you really just enjoy each moment. We can't wait to visit India again in the future, and you really had to be there to understand.

In April 2010, Kristin M., 31, was laid off from her management consulting position. Money was tight, especially since she lived in New York City. But even though she could have saved a bundle by moving in with her boyfriend of three years, she decided against it. “Throughout the economic recession, we lived separately,” she says. This decision puzzled many of her friends, who’d moved in with their boyfriends much sooner.

But it wasn’t because Kristin wasn’t serious about the guy (they’d end up getting engaged a year later), and it wasn’t for religious reasons, either. Kristin just felt that the benefits of living apart were worth the extra expense, even as her savings dwindled. “We both think it’s better for the long-term when couples take things slow,” she explains.

Southern Swingin'



On Sunday Noon, the day was looking so sunny and delightful, so my mom, my daughter, and I went for a nature walk to observe our surroundings, and enjoy a chit-chat while laying on the soft green grass.

We decided to swing on the swing set. Your never too old to swing, we thought. So we all enjoyed swinging and reminiscing on how free we felt doing the things we used to do when we were young kids.

These moments are most enjoyable, and it's important to pay close attention to what is around you, and actually spend time releasing any tension you might have. So Get off your laptops, cell phones, and let yourself breathe the air outside. While your at it, why not go swing?

The Power of Pantry Sharing



Have you shared your pantry lately?

Many people might realize that food in their home has reduced in quantity, then it becomes a shock to them once they have nothing. We know for example how that feels, since we have been in that situation ourselves. It is difficult and disconcerting but when you receive a helping hand during those moments, it really can give hope to your situation and get you back on your feet.

We had a wonderful lady come yesterday, who shared some food from her pantry with us, and it was the perfect presentation of how giving and helpful a person can really be, when they truly have the intention of doing so. Hearing those words "I understand", really makes you feel your not the only one going through this.

The little that we were given, we also decided to share it with others who needed it.
So the point to receiving is also to give. There is a wonderful energy of love and unity when you give back, and it plants a feeling of humbleness inside you, where sharing with others, suddenly becomes a natural habit.

This has been a great experience for both of us as mother and daughter, to blog about many things, and share them with all of you. This blog has been alive for 3 years now. Cluster Ring Carefree..






So Today we received our Flower Cluster ring from Fashion to Figure. It was cutely packaged in tissue paper and sent in a cardboard box. Once we opened it from its plastic envelope, it was bigger then we expected it to be. As it's design its decorated with 6 flowers bundled together like a bouquet, with sparkly crystals on each one, which really shines when it catches the sunlight. The good thing about this ring is that the band is flexible and stretchable which can fit on almost any finger.

This ring is a bit big for our taste, and it does feel a little heavy. Although, with this ring you won't go unnoticed, and it really makes a statement! It would work great as costume jewelry, or with casual wear. If you plan on trying something unique and eye catching, then this ring would fit the bill.

What do I Create NOW?




Both My Daughter and I were discussing about Blogging today. We both agreed that it shouldn't just be about talking about what we do every day, events, news, etc. But it should be more about CREATING.

Creating Something new, inspiring others to do the same, and Having new ideas about what we can do to excel in our lives mentally, physically, and spiritually.

"Every day is a blank canvas", is what we remind ourselves. Each day is a new opportunity to create new from the old, and do something we haven't done before.

Activities which you can do this Earth Day April 22!

Be Car Free: Ride a bicycle, or Take a walk with family or friends.


Bring out the Bird Feeder: This is a great way to give back to Mother Earth’s Nature.


Plant: a Tree, Vegetables, Fruits, any kind of plant which you would like. This would be a great start to beginning your own Garden at home.


Sharing is Caring: Being able to share with our neighbors, friends, or family makes the experience even more enjoyable. If you have a few extra seeds, maybe pass some along to others in your community.


Spread the Word: Earth Day is so important to all of us here living on this beautiful planet. You can spread the word by Blogging, Sending Greeting E-Cards, Throwing an Earth Day Party, Or update this onto Facebook or Twitter.

Lights off! It's Earth Hour..


Groovy Baby Blog Readers, thousands of people around the world have pledged to turn out their lights on March 26, 8:30 pm for Earth Hour. It is a display of the commitment people have for the protection of our planet.
Our family has actually been participating in this lights out event for the past two years. First at 8pm we shut of all the lights and electronics. It was a relief to sit in quietness and without any disturbances. It gave us a chance to sit down, chat about funny things, and spend quality time with the family. During that hour, Not only did it bring us together, but we were helping our planet too. We would love for you all to try it, or if you have tried it in the past, tell us how it was for you!

Aloe Vera is Advantageous.


Here is how you can make your own Aloe Vera Juice from Home.


1. Select eight to ten aloe leaves, cutting them at the base of the plant where they meet the stem.

2. Wash off the cut aloe leaves in cold water, rinsing away any dirt or sticky residue.

3.Using a sharp knife, cut off the scaly thorns and open the aloe leaves.

4. Scrape the aloe vera pulp into the blender.

5. Blend the aloe pulp until it is smooth, without lumps.

We made our own Aloe Vera Juice from Home, using just a blender, aloe vera leaves, and some honey. We blended the two together, until completely smooth. The honey gives it a sweet taste, which we prefer better. We then stored it into a glass container and kept it in the fridge. We drink 2 tablespoons twice a day. This aloe vera juice is beneficial in many ways. It improves digestion, circulation, assists with weight loss and even regulates blood sugar. Aloe vera leaves can easily be found in most grocery stores. We love trying things that are good for our health, and this is one great and "natural" recipe.

This is a beautiful romantic song from Brazil called "Dont forget about me", which is included in this Soap Opera (Novela) Show called "India, Una Historia de Amor." Which translates to "India, a story of love."

We started watching this Soap opera every night of the week, and it's very entertaining and has wonderful actors. It gives you a good look into the Life in India, and Brazil too. Shows beautiful locations in both countries, with bright and vivid colors. It shows you both style, music, and how people from two different cultures can fall in love, despite so many differences. It's currently showing on Telefutura daily at 10 p.m.
